Couscous Herb Salad

This couscous herb salad is fast, fragrant, and endlessly green — fluffy couscous loaded with parsley, mint, and lemon in the spirit of a herb-forward tabbouleh. Couscous steams in five minutes, so this is one of the quickest grain salads you can make, and a mountain of fresh herbs keeps it vivid and light. Serve it alongside grilled meat, roasted vegetables, or a dollop of hummus for an easy Mediterranean spread.

Ingredients

  • 1 1/2 cups couscous
  • 1 3/4 cups hot vegetable stock
  • 1 cup chopped parsley
  • 1/2 cup chopped mint
  • 1 cup cherry tomatoes, diced
  • 1/4 cup olive oil
  • Zest and juice of 1 lemon
  • 1/4 tsp cinnamon
  • Salt and black pepper

Instructions

  1. Steam the couscous

    Pour the hot stock over the couscous, cover, and let it sit 5 minutes. Fluff thoroughly with a fork so it stays light.

  2. Cool it down

    Spread the couscous on a tray to cool quickly and keep the grains separate.

  3. Make the dressing

    Whisk the olive oil, lemon zest and juice, cinnamon, salt, and pepper.

  4. Toss and serve

    Fold in the herbs, tomatoes, and dressing. Taste for lemon and salt, and serve.
