Green Goddess Dressing

This green goddess dressing is a vivid, herb-packed sauce that turns any salad into something special — basil, parsley, chives, and tarragon blended with avocado and buttermilk into a creamy emerald green. It is the dressing that makes the salad of the same name, but it is far too good to stop there. Spoon it over grain bowls, grilled vegetables, or roast chicken, or use it as a dip for crudités.

Ingredients

  • 1/2 avocado
  • 1/2 cup buttermilk
  • 1/4 cup Greek yogurt
  • 1 cup mixed basil, parsley and chives
  • 1 tbsp tarragon
  • 1 garlic clove
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and black pepper

Instructions

  1. Blend

    Combine all the ingredients in a blender.

  2. Blitz until smooth

    Blend until completely smooth and vivid green, scraping down the sides as needed.

  3. Season

    Taste and adjust with more salt, lemon, or a splash of water to thin.

  4. Store

    Keep in a sealed jar in the fridge for up to three days.
