Grilled Chicken Avocado Salad

This grilled chicken avocado salad is a full, satisfying meal in a bowl — juicy charred chicken, creamy avocado, cherry tomatoes, and crisp greens under a lemon dressing. Marinate the chicken while your grill heats and the whole thing comes together in half an hour, with enough substance to keep you going for hours.

Ingredients

  • 2 chicken breasts
  • 2 tbsp olive oil, plus more for dressing
  • 1 tsp smoked paprika
  • 5 oz mixed salad greens
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, sliced
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt and black pepper

Instructions

  1. Marinate the chicken

    Toss the chicken with olive oil, smoked paprika, salt, and pepper. Let it sit while the grill or pan heats.

  2. Grill and rest

    Grill the chicken over medium-high heat for 6–7 minutes per side, until charred and cooked through. Rest 5 minutes, then slice.

  3. Make the dressing

    Whisk the lemon juice, Dijon, 3 tbsp olive oil, salt, and pepper.

  4. Build the bowl

    Toss the greens, tomatoes, and onion with most of the dressing. Top with sliced chicken and avocado, drizzle with the rest, and serve.
