Citrus Avocado Salad

This citrus avocado salad is a bright spot in the cold months — juicy orange and grapefruit segments with buttery avocado, red onion, and a citrus vinaigrette over peppery greens. Winter citrus is at its sweetest just when you need it most, and against creamy avocado it makes a salad that feels both refreshing and luxurious. Segment the fruit properly and this simple bowl looks like something from a restaurant.

Ingredients

  • 2 oranges
  • 1 grapefruit
  • 2 avocados, sliced
  • 4 cups arugula
  • 1/4 red onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp reserved citrus juice
  • 1 tsp honey
  • Flaky salt and black pepper

Instructions

  1. Segment the citrus

    Cut the peel and pith from the oranges and grapefruit, then slice out the segments over a bowl to catch the juice.

  2. Make the dressing

    Whisk the olive oil, 1 tbsp of the reserved citrus juice, honey, salt, and pepper.

  3. Build the plate

    Scatter the arugula on a platter and arrange the citrus, avocado, and onion over it.

  4. Finish

    Drizzle with the dressing, add flaky salt and pepper, and serve.
