Choose a firm, tart apple so it holds its shape and cuts through the richness of the cheese and nuts.
Whisk the olive oil, cider vinegar, maple syrup, Dijon, salt, and pepper.
Core and thinly slice the apples just before serving, and toss them in a little of the dressing to keep them from browning.
Dress the greens lightly and pile them onto plates or a platter.
Top with the apple, walnuts, blue cheese, and cranberries, drizzle with more dressing, and serve.
