The contrast of juicy fruit and briny cheese is unexpectedly perfect, refreshing on the hottest day and elegant enough for a barbecue table. It takes fifteen minutes, needs no cooking, and looks as stunning as it tastes, especially finished with a drizzle of good olive oil and flaky salt.
Keep the watermelon cold right up until serving — the colder the fruit, the better the contrast with the cheese.
Arrange the watermelon and feta on a platter and scatter over the red onion.
Whisk the lime juice and olive oil, and drizzle it over the top.
Add the torn mint, a pinch of flaky salt, and a crack of pepper. Serve immediately.
